🥒 1 zucchini, sliced
🌼 1 yellow squash, sliced
🌱 1 cup asparagus pieces

🧄 3 cloves garlic, minced
🍋 Zest and juice of 1 lemon
🧀 ¼ cup grated parmesan cheese (optional)
🌿 2 tbsp chopped fresh parsley
✨ 1 tsp Italian seasoning

🔥 Preheat oven to 400°F. Spread zucchini, squash, asparagus, and tomatoes on a baking sheet.
🫒 Drizzle with 2 tbsp olive oil, sprinkle with salt, pepper, and Italian seasoning, and roast for 15–18 minutes until tender.
🍝 Cook pasta according to package directions. Reserve ¼ cup pasta water, then drain.
🧄 In a large skillet, heat the remaining olive oil and sauté garlic for about 1 minute until fragrant.
🥗 Add roasted vegetables, pasta, lemon zest, lemon juice, and a splash of reserved pasta water. Toss until everything is well coated.
🧀 Finish with parmesan and fresh parsley for a bright spring flavor.

🫘 Hearty & Healthy Vegetarian Chili
🛒 Ingredients (Serves 4–6)
1 tbsp olive oil
1 small onion, diced
1 bell pepper, diced
2 cloves garlic, minced
1 zucchini, diced
1 cup mushrooms, chopped
1 can (15 oz) kidney beans, drained & rinsed
1 can (15 oz) black beans, drained & rinsed
1 can (15 oz) diced tomatoes
1 small can tomato sauce (8 oz)
1 cup vegetable broth
1 tbsp chili powder
1 tsp cumin
½ tsp smoked paprika
Salt & pepper to taste

👩‍🍳 Directions
Heat olive oil in a large pot over medium heat.
Sauté onion and bell pepper for 3–4 minutes until softened.
Add garlic, zucchini, and mushrooms. Cook another 3–5 minutes.
Stir in beans, diced tomatoes, tomato sauce, and vegetable broth.
Add chili powder, cumin, smoked paprika, salt, and pepper.
Simmer uncovered for 20–25 minutes, stirring occasionally.
