“Kluay” in Thai means bananas and also means easy. This treat is delicious and easy to make like its name as you actually don’t really need to measure nor an oven. It’s the reason why people serve it during the Thai New Year in April hoping to its name will bring us easy and peaceful life. Also, thank you for sticking around although I’ve not been able to do a whole lot of recipes testing and blogging at this time. Ingredients list below 👇
800 grams banana 5 regular bananas , ( or 4 for the batter and 1 sliced up to put on the top
2 TBSP sugar
2 cups rice flour
5 TBSP tapioca flour
250 mL coconut milk
1 cup shredded coconut (or 1 can)

First world country problem. You can tell some companies owners have never been to Asia or learned the difference between coconut water and coconut milk so they package watered down coconut milk and sell it under the name “coconut water”. Then some not so smart Asian person (me) ordered a dozen of them hoping to drink it as an electrolytes ended up spitting it out 😂! I guess I have to make some sort of dessert or coconut milk drink this weekend 🙄. They have good reviews on Amazon though 😂

If I had some energy left after work today, we would have had them for dinner tonight because every season is a grilling season for me 😊
Ingredients
3 lbs chicken wings
1/2 cup cilantro (small bunch or use 2-3 cilantro roots)
4 cloves garlic
1 tsp ground pepper (black or white or 1/2 tsp each)
4 TBSP coconut sugar (or sweetener of choice. If using white sugar, make sure to use low heat so that the chicken cooks before turning brown or burn.)
4 TBSP oyster sauce
4 TBSP soy sauce
4 TBSP dark Soy sauce
1/4 cup water (to get the blender going)

Ingredients
1 tbsp oil
1 lb water spinach (morning glory or pak boong)
1 tbsp garlic (minced)
3-4 Thai chilies (chopped or sliced bias)
4 tbsp water
1 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp fermented soybean (Tao Jeaw) or substitute with Miso paste.
½ tbsp sugar (or sweetener of choice)
