The Science Part 4: Grass-fed vs. Grain-fed Beef nutrition
Dr. Stephan Van Vliet conducted scientific research that measured and compared the nutritional differences between meat from 100% grass-fed cattle to meat from cattle that consumed a grain diet. He found that meat from cattle that ate a 100% grass diet has 2-3 times more Omega-3 fatty acids than meat from grain-fed cattle. In addition, 100% grass-fed cattle had a better ratio of Omega-3 to Omega-6 fatty acids.
Meat from 100% grass-fed animals:

Contains higher levels of Omega-3s and lower levels of Omega-6s.
โ
Contains more antioxidants.
โ
Has more bioavailable Omega-3s because of the โfood matrixโ effect.
Whatโs the point?
โ
Higher Omega-3 fatty acid levels in humans are associated with better metabolic health.
โ
Consuming meat with higher Omega-3s leads to improved Omega-3 to 6 ratios in people.
โ
Ultra-processed foods contain high levels of Omega-6 fatty acids. Thatโs bad. Donโt eat those.

What's the impact of low-nutrient-dense foods on our health?
Dr. Stephan van Vliet of Utah State University's Center for Human Nutrition Studies states that we have access to a high-calorie diet in the U.S. However, those calories are low in nutrients and cause micronutrient deficiencies that have contributed to high rates of chronic metabolic disease.

The Science Part 2: What is Nutrient Density and Why Does it Matter?
Dr. Stephan Van Vliet conducts scientific research that measures and compares the nutritional differences between conventional and regeneratively farmed foods.
His findings indicate that, on average, foods from Regenerative Farms are higher in nutrients like vitamins, minerals, and antioxidants than foods from conventional farms. More to the point, foods from regenerative farms are more nourishing than food from conventional farms.
