Who's up for a blend of sweet and spicy? Get ready to enjoy this delicious peach jalapeño recipe, perfect for using even the mushiest peaches! 🍑🌶️
Steps:
1️⃣ Crush 3 cups of ripe peaches (about 4 large peaches).
In a saucepan, combine 1/2 cup of finely chopped jalapenos, 1 cup of water, 3/4 cup of cider vinegar, 3/4 cup of lemon juice, and 1-13/4 oz powdered pectin. Bring this mix to a gentle boil, then simmer for 20 minutes, stirring occasionally.
2️⃣ Next, add 4 cups of sugar to the pot, stirring until fully dissolved. Bring the mixture to a vigorous boil, stirring constantly, and let it bubble away for 2 minutes.
3️⃣ Remove the pot from the heat and skim off any foam that may have formed.
4️⃣ Carefully pour the mixture into jars, ensuring there's a 1/4-inch space at the top.
5️⃣ Seal the jars tight with lids and immerse them in a boiling water bath for 10 minutes.
