The Owl wouldn't be happening without this man! I'm so fortunate to be able to call him my father, my teacher, and my best friend. He has taught me so much about life and about being a good father to my own kids. Happy fathers day to all the dads out there and all the moms who have to be dad too. Enjoy your day and enjoy your kids even more !❤️🦉🍕

Before and after painting the bottom of the walls. The paneling was dark grey and made it feel small inside. So we decided to color match the ceiling. I love it. Brightens it right up and definitely enhances the diner vibe inside. Oh. And yes I know the electric conduit is crooked lol. I took the pic before I hung them back up!

I had a group of very special visitors today. The OG crew. The Ouellettes... They are descendants of the original owner, his children and grandchildren. They grew up in the diner. They ran the diner. They are the diner.

They are the keepers of the history. They have the stories! One story I love is when Mr. Ouellette, the original owner, would put a sticker on the windshield of cars that were in the lot and weren't parked for the diner. He'd smack em right in the way of the driver so they couldn't see lol. I'm really contemplating keeping this tradition alive lol! Or! He would yell at them over an intercom! I think that's great and totally can picture someone doing it. By the way does anyone have an intercom for sale?!

Did you know there was a second owl location on Second St way back when?! I didn't!

The whole family has been some of my biggest supporters since day one. I think it was my first or second post ever they reached out in support. I've had conversations with them over the months where they shared recipes of the past and ideas for the future. I owe Bruce a nickel for every one of his ideas that I sell. (It could be something cool but we have to work out how to actually make it!)

I wanna do right by their family and honor their families legacy in all of this. If it wasn't for the sacrifices they made as children and adults over the decades they owned the building, all of us wouldn't have the memories of the Owl that we do today and for that I want them to know how much I appreciate them and I'm pretty sure the Flint appreciates them just as much!

Pizza tease Tuesday. Fior di latte, lemon slices, capers, red onions and scallions.

One of my favorite seasonal pizzas. I don't drink but every time I make this pizza it makes me want a Corona.

A well-insulated oven shouldn't be hot on the outside.

Today the oven was over 400°F, but the outside measured only 98°F and the wall behind it just 89°F.

That's exactly what we want to see. The heat stays inside the oven, where it belongs.

After a long day of digging holes we lit up the oven and started seasoning it with the first pies. Of course my father got the first one - he deserves it more than anyone else! His choice was hot honey and pepperoni.

As we get closer to opening, I'm starting to think beyond opening day and planning for the entire year ahead. Consistent, high-quality firewood is going to be a big part of what makes Nite Owl successful, and I want to make sure we have enough supply to keep the oven burning through every season.

So I'm turning to the community:

Who do you recommend for seasoned hardwood firewood?

Who has been reliable? Who should I avoid? Who consistently delivers quality wood?

I'm looking for suppliers who can support a business, not just a few weekend fires in the backyard.

Today, for the first time, a fire burned inside the heart of the Owl.

For months, this has been drawings, permits, construction dust, late nights, second guesses, and more hours of labor than I can count. Piece by piece, we built something with our own hands.

Today, it breathed.

The flames that lit this oven aren't just heating brick and steel. They're fueling a dream, a vision, and a promise to bring something special back to Fall River.

There is still work to do. Plenty of it. But today was one of those moments that makes every challenge worth it.

The first fire is lit.

The Owl is waking up.
