Meet Chef Thomas Boemer, our new Culinary Director. We’re excited to welcome Chef Thomas Boemer — a four-time James Beard nominee and the chef behind Revival, In Bloom, and Corner Table — as Culinary Director for The Wondrous Collective. Thomas brings years of experience and a deep love for bold, honest food. His focus is simple: make the food better across every kitchen we run — one dish, one menu, and one team at a time. He’s working with teams at Tequila Butcher, Whiskey Inferno, Bourbon Butcher, Volstead House, Rum Row, and The Farmer’s Cellar — refining dishes, sharing ideas, and helping each kitchen raise the bar. This isn’t a makeover — it’s a step forward. Changes will roll out gradually and intentionally. You won’t see every menu flip overnight, but you will start to notice sharper flavors, better balance, and a more thoughtful approach to the food you already know and love. His first stop is Revolve Hall in Apple Valley, where he’s working with the teams at Square Cut Pizza, Minnesota Burger Company, Curiouser Coffee, and Ice Cold Tacos. And today, he’s launching his first full-concept menu with us: Wanderer – Adventure-Inspired Provisions. A fresh culinary experience built around global flavors, open-fire cooking, and seasonal ideas. We’re just getting started — and we’re glad to have you at the table. 07/01/2025
