What does it take to bring Snap Pea from North Carolina to San Antonio? A team of four, a cross-country road trip, and connecting with a whole new set of local farmers and producers.

Last month, we headed to Texas to build a concept-driven menu for a corporate client. Out-of-state trips like this can present some logistical puzzles—massive shout-out to Elisabeth, our front of house manager, who drove across the country loaded up with some specialty equipment from our NC kitchen.

Once we all arrived, we hit the ground running. Even outside of NC, sourcing local is a priority to us. We spent our days connecting with Texas growers (including everything from beautiful produce from and pasture-raised Wagyu beef from , to incredible butter from and Texas grown olive oil from ). The event was hosted at the , and brought to life with a team of creatives including our floral partner Olive Thyme
