This dish is cooked entirely over open flame…whole cheeses placed in cast iron or directly over a grill above the fire, allowing the heat to slowly melt the centre while the outside blisters, bubbles, and caramelises. We serve it straight from the fire to the table while the rest of the menu continues cooking over the flames. It keeps guests gathered, engaged, talking, and sharing food together as the feast builds around them 🔥
