Apple Almond Crunch Vegan Spelt Pancakes

This is a quick and easy recipe. You can also try it with peaches!!

Ingredients:

Pancake
1 cup of flour(flour of choice, I used Spelt flour)
1 tablespoon sugar
2 tablespoons baking powder
1/8 teaspoon salt
1 cup coconut milk (can)
2 tablespoons coconut oil
1 teaspoon of vanilla

Topping
1 medium apple, peeled and sliced
1 tablespoon of Earth Balance
1 teaspoon of ginger
1 teaspoon of nutmeg
Agave syrup

Mix dry ingredients in a bowl. Add coconut milk, oil and vanilla. Mix until incorporated. Lightly oil pan, once hot, spoon out mixture into pan. Flip carefully when you see bubbles in middle of pancake.

For topping,put vegan butter in pan. Add apples cinnamon and nutmeg. Cook until tender. Place cooked apples on top of pancakes and top with almonds for crunch. Drizzle with agave syrup(or pure maple syrup). Enjoy!
