Dear Emilia is bringing new culinary energy to Denver 🍝🍸

As the latest concept from the team behind Restaurant Olivia, Dear Emilia carries forward a deep focus on hospitality, craftsmanship and Italian tradition, now in a new setting at 3615 Delgany.

For Ta**us Builders, this project meant delivering a full first-generation restaurant buildout within the River North building. The space features a complex kitchen layout and a highly detailed dining room, anchored by a series of intersecting barrel-vaulted arches that required precise coordination across framing, MEP systems, lighting and millwork.

Project Spotlight: Molino Chido

This 3,578 SF second-generation restaurant TI at at Stanley Marketplace reimagines a large, open floor plan to capture the layered energy of a Mexico City taqueria. The goal was not to fill the space, but to shape it, creating moments of density, movement and intimacy that feel organic.

Construction centered on reimagining the bar as a central anchor, complemented by custom millwork and sculptural concrete planters that divide the room without relying on walls. These elements establish natural zones, guide flow and maintain visual connection throughout the restaurant.

Materiality carries the story. Bright tile and custom wallcoverings add texture and authenticity, keeping Molino Chido’s food and energy at the center of the experience.
