Curry has been on my mind. I prepared a Thai Curry called Khua Kling. Typically, one would stir-fry the protein, but I opted to make mine more akin to a Larb. I began by toasting my chiles and turmeric, then added my Chile sauce and cooked my chicken in the sauce. Various types of protein can be utilized, with chicken and pork being particularly well-suited for this dish. When assembling the components, it is advisable to keep the mint, lime wedges, Thai basil, and cucumbers separate to avoid reheating them with the rest of the dish.
