"Common Baking Substitution Questions
Can I swap light brown sugar for dark and vice versa?
Even though light and dark brown sugar are often used interchangeably and some recipes do work with both, they differ in their molasses content, which in turn affects their moisture level and pH.
The more acidic dark brown sugar was meant to help activate the baking soda and cause cookies to puff in the oven. Light brown sugar just didn’t have the same oomph and, thus, skinny cookies.
Swap with caution and, only if baking soda is not involved like in custards, puddings, sauces, cheesecake, etc."

"How to stop being a people pleaser:
Knowing that your opinion is valid
If you were raised by parents who dismissed your opinion, perhaps sometimes violently, you may fear rejection or criticism if you dare to express your opinion. This fear will be deep rooted and is likely to be felt at a physical level.
When you first start trying to express an opinion you may go into your 'fight or flight' mode, which we enter when we sense danger, and which produces a raised heart rate, flushed face and various other symptoms.
The more you keep expressing an opinion, from the point of view that you have the right to do so, the more natural it will become."

"Spices you should have in your pantry:
Ground Turmeric
Wild ginger is also known as turmeric.
It has a slightly bitter, acrid taste but only when added in abundance to the dish.
That's why it's commonly used as a natural food coloring in many dishes instead of a spice for its flavor.
You can find this as ground or fresh.
Word of caution when using the fresh kind: this stains very strongly and your hands, as well as your chopping board, will be tinged a golden hue if you do not wear gloves or otherwise protect your surfaces.
Wear gloves and immediately rinse your board after prepping this spice."
