1. ��Lets start by marinading the clean and dried chicken, 

2. In a medium mixing bowl. Add 2 tbsp olive oil, 4 tbsp Sofrito, 4-5 minced garlic cloves, the zest and juice of 1/2 large lemon, a couple generous pinches salt, fresh cracked pepper, 1 tbsp smoked paprika, 1 tbsp fresh oregano,

3. ���Fully coat the chicken on both sides & marinade the chicken. Let sit for 2-6 hours or ideally, overnight.

4. ���Preheat your oven to 375F. Remove chicken from fridge and let it come up to room temp before putting in oven (this takes about 30 mins)

5. Cook your chicken for 45 mins covered. remove the cover base your chicken with the juices from the pan & cook 15 mins uncovered or until browned and crispy 

6. For your rice, You can use whatever rice youd like follow the package instructions & Just add 4-5 tablespoons of Sofrito per cup of rice & 1 Tbsp of complete seasoning or your favorite all purpose seasoning. 

7. While your chicken cooks. Let’s get the sauce made. I blended 3 tbsp of thick greek yogurt,  fresh mint (about 2 tbsp), 2 green onions or scallions (green and white part), 1/2 large jalapeño ( Seeds removed) , 2 cloves of garlic, 3 tbsp of Fresh chives, 1 tbsp olive oil, the juice of half a lemon, and a couple generous pinches of salt + pepper. Blend well, taste, and adjust as you like.

8. For the salad I diced and mixed 1 tomato, 1/2 onion, 1 jalapeno, fresh cilantro, salt, a drizzle of olive oil, and lemon juice. Plate and enjoy!
