Juicy grilled chicken breasts are smothered with buttery sautΓ©ed mushrooms, sweet caramelized onions, and melted Monterey Jack cheese for a restaurant-quality dinner that's rich, comforting, and packed with protein.

Ingredients:
Chicken:
β’ 4 Perdue Boneless Skinless Chicken Breasts
β’ 2 tbsp avocado oil
β’ 2 tsp paprika
β’ 2 tsp garlic powder
β’ 1 tsp onion powder
β’ 1 tsp smoked paprika
β’ 1 tsp Italian seasoning
β’ Salt and black pepper to taste
Smothered Topping:
β’ 2 tbsp light butter
β’ 10 oz baby bella mushrooms, sliced
β’ 1 large yellow onion, thinly sliced
β’ 2 cloves garlic, minced
β’ 8 slices Monterey Jack cheese
β’ 2 tbsp chopped fresh parsley
Instructions:
Season both sides of the chicken with paprika, garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and pepper.
Heat the avocado oil in a large cast-iron skillet over medium-high heat. Sear the chicken for 5β6 minutes per side until golden brown and nearly cooked through.
In another skillet, melt the butter and sautΓ© the onions for 8β10 minutes until caramelized. Add the mushrooms and garlic and cook until tender and lightly browned.
Top each chicken breast with the mushroom and onion mixture, then place two slices of Monterey Jack cheese over each piece.
Cover the skillet for 2β3 minutes until the cheese melts into a smooth blanket.
Finish with fresh chopped parsley and serve immediately.

HIGH-PROTEIN BBQ CHICKEN SALAD
This is one of those salads that doesn't feel like you're eating a salad. π€€
Tender shredded chicken is tossed in sugar-free BBQ sauce, then combined with crisp romaine lettuce, sweet corn, black beans, juicy cherry tomatoes, red onion, and a little reduced-fat cheddar cheese for the perfect balance of flavor and texture.
To keep it high in protein, I made a creamy BBQ dressing using cottage cheese, Greek yogurt, and a splash of BBQ sauce. It adds a rich, smoky flavor without all the extra calories you'd get from a traditional dressing.
Every bite is loaded with smoky BBQ chicken, crunchy veggies, creamy dressing, and plenty of protein to keep you full for hours.

For the dressing, blend 1 cup cottage cheese, Β½ cup plain Greek yogurt, 1 tablespoon sugar-free BBQ sauce, 1 tablespoon lime juice, garlic powder, salt, and pepper until smooth and creamy.
Pour the dressing over the salad and toss until everything is coated.
The result is smoky, creamy, crunchy, and packed with protein. It's one of my favorite healthy lunches because it tastes like summer BBQ in a bowl. π

π₯ HIGH-PROTEIN BUFFALO RANCH CHICKEN BOWL π₯
I swear this bowl tastes like something you'd order from a restaurant.
I tossed chicken breast with Buffalo sauce, garlic powder, paprika, and a little ranch seasoning, then cooked it until golden and slightly charred.
Then I loaded a big glass bowl with jasmine rice, cucumbers, cherry tomatoes, red onion, shredded cheddar cheese, and creamy cottage cheese for an extra protein boost.
For the sauce, I mixed plain Greek yogurt, ranch seasoning, lemon juice, and a splash of water until smooth and drizzled it all over the top.
The combination of spicy Buffalo chicken, cool ranch, crunchy veggies, and creamy cottage cheese is SO good.
This came out to around 50g+ protein and kept me full for hours. πͺπ€€
