Crispy Zucchini Fries 
Ingredients:

2 medium zucchinis, cut into sticks
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs, beaten
Olive oil spray

Instructions:

Preheat Oven:

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Prepare the Coating:

In a shallow bowl, mix together the panko breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.

Dip the Zucchini:

Dip each zucchini stick into the beaten eggs, allowing any excess to drip off.
Roll the zucchini sticks in the breadcrumb mixture, pressing lightly to adhere. Place the coated zucchini sticks on the prepared baking sheet.

Bake:

Lightly spray the coated zucchini sticks with olive oil spray. This helps them get extra crispy in the oven.
Bake in the preheated oven for 20-25 minutes, or until the zucchini fries are golden brown and crispy. Flip the zucchini sticks halfway through the baking time to ensure even crispiness.

Serve:

Remove from the oven and let cool slightly before serving. Enjoy your crispy zucchini fries with your favorite dipping sauce!
