This recipe is the perfect weeknight dinner or lunch. It’s absolutely delicious. The Green Goddess dressing is pretty much the star of the show. This is a super easy summer meal that you’ll make on repeat! What’s your favorite easy summer dinner?

It’s and I’m wondering how much butter you guys think this is?! (I didn’t have butterkäse) trying the viral sweet potato trend! 😎
What I did:
Wash the potato and poke several holes all over with a fork and bake at 400° for an hour. let cool a little, and then slice the top off. Cut cheese and 2 and 2/3 tbsp butter long ways, so it can slide into the potato. Let melt and enjoy. Lily saw this originally and then did her own spin.
This sandwich was so much fun to make.
