CUCUMBER KIMCHI ๐Ÿฅ’ written recipe below ๐Ÿ‘‡๐Ÿพ A delicious Korean ferment, the perfect addition to any dish ๐Ÿ‡ฐ๐Ÿ‡ท๐Ÿ’• ๐Ÿ‘‡๐Ÿพingredients๐Ÿ‘‡๐Ÿพ -6 mini cucumbers -1 large carrot -2 spring onion -big pinch of salt -1 tbsp soy sauce -2 garlic cloves -1/8th inch ginger -1 tsp chilli powder -1 tsp chilli flakes -1 tbsp gochujang paste -1 tbsp nori flakes -1 tsp sugar -1 tsp MSG ๐Ÿ‘‡๐Ÿพmethod๐Ÿ‘‡๐Ÿพ -using chopsticks, cut vertical slits halfway through the cucumber all the way down, flip over then cut the slits diagonally. -shred the rest of the vegetables, mix with the cucumber then heavily salt them before leaving to sit for 30mins-1hr. Then remove the salty liquid. -mix the ingredients for the marinade then massage into the soften vegetables, leave to sit for another 30mins-1hr (longer you leave the better). -serve with rice, noodles or my favourite - a bibimbap and enjoy x

B.L.T using tofu instead of bacon, which is just as salty and smoky as the real stuff ๐Ÿฅ“ ๐Ÿ‘‡๐Ÿพingredients๐Ÿ‘‡๐Ÿพ -1 block firm tofu -1 tsp garlic/onion powder -1/2 tsp smoked paprika -1/2 tsp cayenne pepper -big pinch of salt n pepper -1 tbsp tomato paste -1 tbsp liquid smoke -1 tsp MSG -1 vegetable stock cube -1/2 cup water ๐Ÿ‘‡๐Ÿพmethod๐Ÿ‘‡๐Ÿพ -cut your tofu into rasher strips, mix the marinade then coat the strips in the marinade and leave for as long as possible. 1hr-12hrs. -bake, air fry or pan fry until crispy then serve witb a buttered bagel, salted tomato and lettuce. Serve and enjoy x

Fried chicken made from enoki mushrooms ๐Ÿ” ๐Ÿ‘‡๐Ÿพingredients๐Ÿ‘‡๐Ÿพ Enoki Plain flour Corn flour Garlic/onion powder Smoked paprika Oregano/basil Salt n pepper Milk + vinegar ๐Ÿ‘‡๐ŸพMethod๐Ÿ‘‡๐Ÿพ Mix the wet and dry mixes then break the enoki into peices before coating in the wet, then the dry, the wet again and finally dry before frying till crispy and serving.

(VG) SCRAMBLED EGG ๐Ÿฅš written recipe below ๐Ÿ‘‡๐Ÿพ A super easy, tasty, high protein recipe perfect for a breakfast/brunch treat ๐Ÿ˜Š ๐Ÿ‘‡๐Ÿพingredients๐Ÿ‘‡๐Ÿพ -1 block silken tofu -2 tbsp nutritional yeast -1/2 tbsp garlic powder -1 tsp onion powder -1/2 tsp turmeric -splash of soy milk -salt n pepper to taste -1 block firm tofu -1/2 white onion -2 garlic cloves -bread, greens, chilli oil and seeds ๐Ÿ‘‡๐Ÿพmethod๐Ÿ‘‡๐Ÿพ -fry the minced garlic and onion till soft and brown then add the broken up firm tofu and sear till brown too. -blend the silken tofu with the other ingredients and then add to the pan along with the milk and simmer to reduce and thicken. -serve ontop of bread with the garnishes, in tacos or as part of a fry up and enjoy x

CREAMY CHEESY POTATO BAKE ๐Ÿฅ” written recipe ๐Ÿ‘‡๐Ÿพ ๐Ÿ‘‡๐Ÿพingredients๐Ÿ‘‡๐Ÿพ -4 garlic cloves -1 large white onion -1 tbsp tomato purรฉe -big handful cherry tomatoes -fresh rosemary, thyme and basil -few bay leaves -1 cup vegetable stock -1/2 cup soy cream -1 block firm tofu -salt n pepper to taste -4 large potatoes -splash of olive oil -1 tsp garlic + onion powder each -salt n pepper to taste -handful of vg cheese, nutritional yeast and chives/parsely to garnish ๐Ÿ‘‡๐Ÿพmethod๐Ÿ‘‡๐Ÿพ -fry the minced garlic and onion until soft and turning brown, then add the tomato purรฉe and cook for another few minutes before adding the cherry tomatoes and sweat until they burst. -add the stock, soy cream, baked firm tofu and the dried and fresh herbs, salt n pepper to taste then simmer to reduce and thicken. -peel and dice the potatoes then boil them for 10 minutes, drain and cover them to steam dry. -coat in the dried spices and oil then bake in the oven until crispy. -place the crispy potatoes on-top of the creamy mince, add the cheese/nutritional yeast then place under the grill to finish off. -garnish with more cheese, fresh herbs and salt n pepper then serve and enjoy.

COOKIES (egg free + vg friendly) ๐Ÿช written recipe below ๐Ÿ‘‡๐Ÿพ ๐Ÿ‘‡๐Ÿพingredients๐Ÿ‘‡๐Ÿพ -3/4cup brown sugar -1/4cup white caster sugar -1/2 cup vegan butter -2 tbsp vg milk -1 tsp vanilla extract -1 tsp almond extract -1 + 1/4 cup white flour -1/4 tsp baking powder -big handful chocolate chips -biscoff/chocolate spread -pinch of sea salt ๐Ÿ‘‡๐Ÿพmethod๐Ÿ‘‡๐Ÿพ -combine the two sugars then add the room temp butter and whip into a cream before adding the milk then whipping, adding the extracts and whipping again - whip for at least a few minutes each time. -add the flour, baking powder and a pinch of salt then gently mix until just combined then add the chocolate chips and stir them in. -place a few 1/2 tsp to 1 tsp of the spread onto lined baking sheets and place in the freezer. -break the dough into equal sized chunks, wrap around the spread then chill in the fridge for 30mins to 1hr. -place on a lined baking tray and bake in the oven for 8-12 minutes, depending on how chewy/crunchy you want them. -sprinkle on some salt to finish and enjoy whilst still warm.

CREAMY CAULIFLOWER PASTA ๐Ÿ written recipe ๐Ÿ‘‡๐Ÿพ A creamy plant based pasta sauce that has no cream in it BUT is super creamy thanks to some cauliflower ๐Ÿ’• ๐Ÿ‘‡๐Ÿพingredients๐Ÿ‘‡๐Ÿพ -1/2 cauliflower head -5 garlic cloves -1 large white onion -1/2 cup vg milk -1 cup veg stock -4 tbsp nutritional yeast (or vg cheese) -1/2 tsp white pepper -salt n pepper to taste -fresh parsely/chives, crispy breadcrumbs for garnish ๐Ÿ‘‡๐Ÿพmethod๐Ÿ‘‡๐Ÿพ -roast the cauliflower, onion and garlic in the oven @ 200ยฐ for 30mins-1hr. Turn every 20mins. -blend with the milk, stock, nutritional yeast, salt n pepper. -return to the pan and heat until reduced and slightly thicker. -stir in cooked pasta then top with the garnishes and enjoy x

GARLIC SESAME WONTON RAMEN ๐Ÿœ recipe below โฌ‡๏ธ Needed a quick, easy but equally as tasty dinner tonight so this ramen was perfect ๐Ÿ‘Œ๐Ÿพ ๐Ÿ‘‡๐Ÿพingredients๐Ÿ‘‡๐Ÿพ -2 garlic cloves -1 spring onion -1 cup stock -1/2 tsp brown sugar -1 tbsp soy sauce -1 tbsp tahini/sesame paste -1/2 tsp MSG -noodles, wontons, sesame seeds, cress and cucumber ๐Ÿ‘‡๐Ÿพmethod๐Ÿ‘‡๐Ÿพ -fry the minced galric and spring onion in 1/2 tbsp neutral oil until it starts to turn brown. -add the stock then simmer for a few minutes. -mix the tahini, soy sauce, brown sugar and MSG in your serving bowl then add the garlic broth and mix together. -add your cooked noodles, steamed wontons then garnish, serve and enjoy x
