Today is Stop Food Waste Day. While most of the conversation centers on purchasing and storage (still important), there's an equipment layer that doesn't get enough attention.

Refrigeration running above safe temperature zones accelerates spoilage. Ovens and steamers that can't hold calibration lead to inconsistent cook times and product loss. Walk-in coolers with failing door seals cause temperature drift that operators often don't catch until product is already compromised.
