Yield: 12 servings
Prep time: 30 minutes
Chill time: 6 hours to overnight
Ingredients:

For the Crust:

300 g malted milk biscuits

150 g unsalted butter, melted

For the Chocolate Malt Cheesecake Filling:

150 g milk chocolate, finely chopped

150 g dark chocolate (50-60% cacao), finely chopped

550 g full-fat cream cheese, room temperature

75 g icing sugar (powdered sugar), sifted

100 g malt milk powder

1 tsp vanilla extract

300 ml double cream (heavy cream), chilled

For the Chocolate Ganache Topping:

300 g milk chocolate, finely chopped

150 ml double cream (heavy cream)

For Decoration:

150 g malted chocolate balls (e.g., Maltesers)

50 g malted chocolate balls, crushed

100 ml double cream, whipped to stiff peaks (optional, for piping)

Instructions:

Prepare the Crust: Line the base and sides of an 8-inch (20 cm) springform pan with parchment paper. Process the malted milk biscuits in a food processor until they form fine crumbs. Combine with the melted butter until the mixture resembles wet sand. Press the mixture firmly into the base of the prepared pan. Refrigerate while preparing the filling.

Melt the Chocolate: Place the chopped milk and dark chocolate into a heatproof bowl set over a saucepan of barely simmering water (double boiler). Stir gently until fully melted and smooth. Remove from heat and allow to cool to room temperature (it must remain fluid but not warm to the touch).

Prepare the Cheese Base: In a large mixing bowl, beat the room-temperature cream cheese, sifted icing sugar, malt powder, and vanilla extract on medium speed until perfectly smooth. Do not overmix, as this can break down the stabilizers in the cream cheese.

Whip the Cream: In a separate, chilled bowl, whip the 300 ml of cold double cream until it holds soft peaks.

Combine the Filling: Pour the cooled, melted chocolate into the cream cheese mixture and fold through swiftly using a silicone spatula until thoroughly combined. Immediately add the softly whipped double cream and gently fold it into the chocolate-cheese mixture until no white streaks remain.

Set the Cheesecake: Spoon the filling over the chilled biscuit base. Use an offset spatula to smooth the surface into an even layer. Refrigerate for a minimum of 6 hours, or preferably overnight, to allow the cocoa butter and dairy fats to properly crystallize and set.

Prepare the Ganache: Place the chopped milk chocolate for the topping into a heatproof bowl. In a small saucepan, heat the 150 ml of double cream just until it reaches a gentle simmer. Pour the hot cream over the chocolate. Let it sit undisturbed for 2 minutes, then stir gently from the center outward until a smooth, glossy emulsion forms.

Apply the Topping: Pour the ganache over the fully chilled cheesecake, spreading it into an even layer. Return the cheesecake to the refrigerator for at least 1 hour to allow the ganache to set.

Decorate and Serve: Once the ganache is firm, carefully remove the cheesecake from the springform pan. If desired, pipe small rosettes of stiffly whipped cream around the border. Garnish with whole and crushed malted chocolate balls immediately prior to serving to prevent the malt centers from weeping.

Slicing: To achieve clean cuts, dip a sharp chef's knife into hot water, wipe it completely dry, and slice. Repeat this process for every cut. Store leftovers in an airtight container in the refrigerator for up to 3 days.
