The Italian word for pig butchery - norcino - is derived from Norcia. I had the pleasure of meeting Ilaria who is carrying on her family's business, Casale de Li Tappi, of producing this beautiful salumi and prosciutto

Have you ever had Asian soy milk? It is nothing like the supermarket bland anemic milks that leave a weird after taste. Long a favorite drink of every Chinese person ever, it is creamy, rich, and oh so addictive. It is usually enjoyed on its own as a hot or cold drink. I'm making it over on my stories if you want to learn how. Trust me it's worth it! Also used it in some kimchi ramen I'm testing if you want to see the story before it disappears.

Instead of using precooked fish, I prefer to use raw fish in my fish cakes. The fish is mixed with fresh breadcrumbs, fennel, herby chermoula, and eggs and then seared in a hot pan for all the yummy brown bits. They are then finished in a gentle bath of tomato sauce and more chermoula. This is how you make super tender fish cakes
