Another great trip to Jalisco, and this time I finally made it out to Fortaleza, which has been on my list for years! Huge thanks to Guillermo and Stefano for being such wonderful hosts.

The "marais salants" or salt flats where fleur de sel is made here on the Atlantic coast of France in Vendée.

Last week, my good friend and talented bartender / owner operator Jørgen Dons joined us at Bisou Bisou as our first international Round Table guest.

Hailing from Trondheim, Norway, Jørgen is a partner in Raus Bar, as well as award-winning aquavit brand Vi, and organizes a series of cocktail food pairing popups, which he spoke about in detail during his seminar.
