Lamb meatballs, silky summer peppers, garlic yogurt, chilled white wine. Recipe in my cookbook - a peak summer meal.
Cherry Tomato Pasta (Serves 2)
Cook 8 oz linguine in salted water until al dente, reserving 1/4 cup of the pasta water before draining.
While the pasta cooks, add 4 oz nduja or to a skillet over medium heat. Once it begins to melt, stir in 2 cups cherry tomatoes, 4 minced garlic cloves, 1 teaspoon kosher salt, 1 teaspoon dried herbs, and 1/4 teaspoon red pepper flakes. Cook for 8–10 minutes, stirring occasionally, until the tomatoes soften and begin to burst.
Add the drained pasta to the skillet along with 1/4 cup freshly grated Parmesan and the reserved pasta water. Toss until glossy and well coated.
Finish with fresh herbs and more freshly grated Parmesan before serving.
