This is part of what fresh-on-tap looks like before it reaches your glass.

The larger tanks on the left are fermenters, where the SCOBY lives and the kombucha does its main transformation: tea becoming tangy, lively, cultured Rev.

The tanks across the front are brite tanks, a brewing term for vessels where finished beverages chill, condition, and get ready to be served. For Rev, that means finished kombucha rests cold before it gets kegged.

We’ve been hearing some pretty funny, surprising, and strangely beautiful things from people tasting Rev at the market.

So we started writing a few of them down.

That’s really the whole idea here.

This week, people were tasting Purple Citrus, Bailee’s Vanilla Hibiscus, and Fermented Coffee, and these are a few of the things they actually said at the tap.

We love hearing people try to put words to what they’re tasting, especially when it comes out honest, unexpected, and completely original.
