Roasted Red Pepper Hummus

- Recipe Ingredients:
* 2 cloves garlic
* 1 15 ounce can chickpeas (drained and rinsed)
* 1/2 teaspoon salt (or to taste)
* 1/4 teaspoon black pepper (or to taste)
* 2 1/2 tablespoons olive oil
* 2 tablespoons tahini
* 1/3 - 1/2 cup chopped roasted red bell pepper
* 1/8 teaspoon cumin

- Follow These Steps:
1. Begin by draining the chickpeas and rinsing them under cold water.
2. In a food processor or blender, mix together the chickpeas, garlic, roasted red pepper, olive oil, tahini, lemon juice, salt, black pepper, and cumin.
3. Cover the processor and pulse the ingredients a few times, then blend until the mixture is smooth, scraping down the sides as needed.
4. If the hummus is too dense, consider adding a little water to reach your desired consistency and adjust the seasonings to taste.
5. This delicious hummus was a hit at my recent gathering; serve it with pita chips or fresh vegetables for a perfect snack!

Chinese Chicken Cabbage Stir-Fry

Needed Ingredients:
◆ 1 lb Chicken breast (boneless and skinless (cut into 1-inch chunks))
◆ 1 tsp Sea salt (divided)
◆ 1/2 tsp Black pepper (divided)
◆ 2 tbsp Olive oil (divided)
◆ 6 cloves Garlic (minced)
◆ 2 tbsp Fresh ginger (minced; or use 1/2 tsp ground ginger - see instructions)
◆ 1/2 large Onion (chopped)
◆ 1 large Bell pepper (chopped)
◆ 1 medium head Cabbage (chopped or coarsely shredded; about 8-10 cups)
◆ 2 medium Carrots (shredded)
◆ 1/4 cup Coconut aminos (or low-sodium soy sauce)
◆ 2 tbsp Honey
◆ 2 tsp Toasted sesame oil
◆ 1/4 cup Green onions (chopped)
◆ 1 tbsp Sesame seeds (optional)

🔻 Stepwise Instructions:
1. Dry the chicken pieces with paper towels. Season them with 1/2 teaspoon sea salt and 1/4 teaspoon black pepper evenly in a large bowl or on a cutting board.
2. Heat 1 tablespoon of olive oil in a large skillet, Dutch oven, or wok over medium-high heat. Add the chicken and cook for 4-6 minutes, stirring occasionally to allow browning, until the chicken is golden brown and cooked through. Transfer to a plate and cover to keep warm.
3. Lower the heat to medium. Add the remaining 1 tablespoon of olive oil to the pan. Sauté the garlic and fresh ginger (if using) for 1-2 minutes until fragrant.
4. Add the chopped onions and bell peppers. Cook for 5-7 minutes, until the onions are translucent and slightly brown, and the peppers are tender.
5. If using honey, whisk it with the coconut aminos in a small bowl.
6. Raise the heat to medium-high. Add the shredded cabbage, carrots, and coconut aminos mixture (or just coconut aminos if not using honey). Season with ground ginger (if not using fresh ginger), and the remaining salt and pepper. Stir-fry for 3-5 minutes until the cabbage is tender and any excess liquid evaporates. Increase heat to high if needed.
7. Return the chicken to the pan. If it’s not warm, cook for 1-2 minutes until heated through.
8. Remove from heat. Stir in the toasted sesame oil, if using. Garnish with green onions and sesame seeds if desired.

S’Mores Rice Krispies Treats

⭐ Ingredient Essentials:
◆ 6 tablespoons butter with salt
◆ 4 bars Hershey chocolate (broken into bits)
◆ 4 cups Rice Krispies cereal
◆ 2 cups Golden Grahams cereal
◆ 1 (12-ounce) pack large marshmallows
◆ 2.5 cups mini marshmallows (separated) (about half from a 10-ounce pack)
◆ 1 teaspoon vanilla flavoring

⭐ Step-by-step:
1. Start by preparing your 9x9 inch baking dish with parchment paper or by greasing it with butter. This makes for easy removal later.
2. In a large saucepan, melt the butter over medium heat.
3. Toss in the jumbo marshmallows and keep stirring until everything is melted and smooth.
4. Once melted, take the pan off the heat and mix in the vanilla. Next, fold in the Rice Krispies, Golden Grahams, and 1 1/2 cups of mini marshmallows. Stir well to coat the cereal with that lovely marshmallow mixture.
5. Spoon half of this delightful mixture into your prepared dish and sprinkle with half of the Hershey's pieces and 1/2 cup of the remaining mini marshmallows.
6. Top with the rest of the cereal blend and gently press down. Be sure not to pack it too tightly, or your treats won't be as fluffy! Finish by adding the rest of the Hershey pieces and mini marshmallows on top.
7. Cut into squares and enjoy these delicious bites!
