Not only is broccoli loaded with vitamins and minerals, but when you toss it into a fresh salad with some tasty add-ins like cranberries, sunflower seeds, and a tangy dressing, it becomes a flavor explosion! Plus, it's a perfect dish for any occasion, whether you're meal prepping for the week, bringing a side to a potluck, or just looking for a refreshing and healthy lunch option. Enjoy every crunchy, satisfying bite!
RECIPE
Salad ingredients:
1 pound broccoli florets, raw or blanched
1 red apple, chopped
3/4 C dried cranberries or raisins
1/2 C almonds, sunflower seeds or pecans
1/2 pound uncured bacon, chopped and cooked crispy
1/2 C red onion, finely diced

Dressing
1/2 C mayonnaise (seed oil free such as Chosen Foods brand)
1/2 C plain yogurt
2 1/2 T apple cider vinegar
1 1/2 T organic, raw honey
1/2 T parsley, chopped
1/4 tsp garlic powder
1/4 tsp salt

Cut/chop salad ingredients as instructed.
Whisk together dressing ingredients
Combine and serve
