Crumbl Style PB Fudge Cookies recipe:
PB Cookies
Sea Salted Peanut Butter Cookie Chips® - 1 bag
All purpose flour - 1/4 cup
Baking Powder - 1 tsp
Peanut Butter - 3 tbsp or 1 ½ oz
Unsalted Butter, room temperature - 5 oz
Eggs, large - 1 ea
Instructions
Preheat the oven to 350 F.
In a bowl or mixer. blend all dry ingredients.
Add peanut butter, egg, & butter and blend until dough forms.
Scoop 2” dough onto a parchment lined cookie sheet.
Bake for 12-13 minutes or until the edges are golden brown. Cool.
Fudge Filling:
Granulated Sugar - 10 oz
Heavy Cream - 8 fl oz
Dark Chocolate, chopped - 6 oz
Unsalted Butter - 2 oz
Vanilla Extract - 1 oz
Cocoa Powder, sifted - 4 oz
Salt - ½ tsp
Instructions:
Bring sugar and cream to a boil and remove from heat immediately.
Place chocolate in a bowl & pour hot cream over. Whisk smooth.
Add butter, vanilla, cocoa powder, & salt. Blend together until smooth.
Place plastic wrap directly over the surface of the filling and cool.
American Buttercream
Butter, unsalted- 12 oz
Powdered Sugar, sifted - 14 oz
Whole Milk - 2 tbsp
Instructions:
In a mixer, beat butter and powdered sugar until smooth.
Slowly pour in the milk on low to incorporate.
Scrape and continue to beat on high speed until light and fluffy.
Fudge Buttercream:
Make a 50 50 ratio of each filling and blend together.
For a fudgier buttercream, use more fudge filling.
Assemble
Pipe buttercream over top of each cookie.
Top buttercream with chopped Reese’s PB cups or crushed peanuts.
