owever, I realized that most pizzas were undercooked and not very exciting. I decided to create a pizza that was "well done" in both senses of the phrase. I feel confident that our pizza exceeds what I had hoped for when I first began refining recipes. Our 12 inch, hand-crafted, thin crusted pizzas are cooked in our Wood Fired brick oven which reaches an excess of 900 degrees. The artisanal Pizzas may even lose their perfect shape due to contact with the stone floor of the oven.
