Phuong VanValkenburgh started his history in hospitality at a young age. Phuong’s mother owned and operated her own restaurant when he was only 10 years of age. Being ingrained to the business early in life helped him pursue and develop as a restaurateur. Getting his higher education at University of Washington in business and architecture, improved his awareness of management and design. After opening up TWO, his second restaurant, Phuong’s knowledge and inspiration has become more acute and concepts more innovative. The first restaurant, Zak’s Place, was in operation for 5 years during difficult economic times in our nation’s history. Understanding how to manage finances and products through such a strenuous period has only brought higher expectations for future ventures. Now, pairing with Chef Maurizio LoBosco, Phuong is ready to make a return to the suburbs and take this opportunity to make Gaia Italiano Restaurante a place Berwyn has not experienced before.
