🍲 Creamy Beefy Pasta Soup — cozy, hearty, and perfect for chilly nights!

This one is a favorite at our house!

👇 INGREDIENTS
• 1 lb ground beef or Italian sausage. I prefer sausage for added flavor.
• 1 tbsp olive oil (optional if sausage is lean)
• 1 small onion, diced
• 2 cloves garlic, minced
• 2 carrots, peeled & sliced
• 2 celery stalks, diced
• 4 cups chicken broth
• 1 cup heavy cream
• 1 ½ cups ditalini pasta (or any small pasta)
• 1 tsp Italian seasoning
• 1 cup shredded cheddar (or cheddar/mozz mix)
• Salt & pepper to taste
• Fresh parsley for garnish 🌿

👇 INSTRUCTIONS
1️⃣ Brown the meat
Cook beef/sausage in a large pot over medium heat until browned. Break into pieces and drain excess grease if needed.

2️⃣ Add veggies
Toss in onions, carrots & celery. Sauté 5–7 minutes until softened. Stir in garlic and cook 1 more minute.

3️⃣ Add broth & seasoning
Pour in chicken broth. Season with Italian seasoning, salt & pepper. Bring to a boil.

4️⃣ Add pasta
Stir in ditalini. Reduce to medium heat and simmer 10–12 minutes until al dente.

5️⃣ Make it creamy 😍
Add heavy cream and cheese. Stir until melted and slightly thickened. Taste + adjust seasoning.

6️⃣ Serve
Top with parsley and extra cheese if you’re like me 🤭
