Most people use "Cajun" and "Creole" like they mean the same thing. They don't. And the difference is worth understanding.
So I went home to Louisiana to find it—in a pot of gumbo, in a Breaux Bridge dance hall, in the hands of a metal smith forging a Cajun triangle the way it's been done for generations.
