One of my favorite side dishes is ridiculously simple: slice two red bell peppers and half of a red onion, toss in a bowl with olive oil, smoked salt and freshly ground pepper. Cook in a skillet for about 10 minutes or until the bell pepper gets a little brown at the edges. It’s always great and seems to complement just about every main dish I pair it with 🥂

Beef Wellington is WAY easier than I expected!
I chose to dice mushrooms and onions for a little more texture. The puff pastry worked best once it had completely thawed.
I also opted to make individual servings rather than a whole giant tenderloin.
The results were magical 🥂

It’s been so long since I’ve had a good chef’s salad that I actually googled around for recipes. I ended topping with Marie’s White Balsamic Shallot dressing and it was amaze 😘
