Chinese Chicken & Broccoli Stir-Fry from I Heart Umami - Asian-Inspired Paleo, Whole30, Keto Recipes
An interesting story to share - I actually don’t know what Chicken Broccoli is until I moved to the states. After living here for 15 years, ironically 2 of my most popular dishes on my blog are Chicken Broccoli & Beef Broccoli! :) I’ve came to love these two Chinese American dishes SO MUCH & I guarantee they taste juicy & SO FLAVORFUL better than any takeouts! Serve 4
Chicken seasonings:
1.5 chicken breasts
1 tbsp coconut aminos
1.5 tsp arrowroot powder
½ tsp baking soda (optional)
⅛ tsp black pepper + ¼ tsp coarse salt
2 tbsp olive oil
Chicken Stir-Fry Sauce:
2 tbsp coconut aminos
½ tsp toasted sesame oil
½ tsp aged balsamic vinegar
¼ tsp coarse salt
2 tbsp chicken stock
1 tsp arrowroot powder
Other:
4 garlic cloves, thinly sliced
1 tbsp ginger, finely chopped
4 bulbs scallions, chopped, separate white + green parts
10 oz. broccoli florets, blanched
Avocado oil or ghee
Thin slice chicken to about ⅛ inch thin. Season with ‘chicken seasonings’. Mix well & set aside in the fridge. Combine ‘Chicken Stir-Fry Sauce’. Prepare garlic, ginger, and scallions. Hot water blanch or microwave broccoli florets for 1-2 mins on high. Set aside to drain.
In a well-heated large skillet, add 1.5 tbsp cooking fat. Sear the chicken in 1 even layer over medium-high heat without disturbing until they are golden brown then sear the flip side about 1 min. The chicken should be almost cooked through before setting aside along with the pan juice.
Use the same skillet, add 1.5 tbsp cooking fat, saute garlic, ginger, and white scallion parts over medium heat until fragrant, 9-10 seconds.. Season w/ a pinch of salt.
Add chicken & broccoli to the skillet. Give a quick toss then pour-in stir-fry sauce. Toss & coat the sauce over until it’s slightly thickened (8 -10 secs). Garnish w/ green scallion parts & serve hot or in room temperature w/ cauliflower rice.
