We recently visited with students at Jolleyville Elementary to talk about food waste. We shared how Sundy Lunchbox takes bumped and bruised produce that would otherwise end up in a landfill and transforms it into delicious, shelf-stable meals that people love.

🌱 Veggie of the Week: RADISH! 🌱

Don't sleep on this humble root vegetable! With only 19 calories per cup and an impressive dose of Vitamin C, fiber, and antioxidants, the radish is a nutritional overachiever hiding in plain sight.

Raw, roasted, pickled, or sautéed — there are so many ways to work this crunchy gem into your meals. This week, challenge yourself to add radishes to at least one dish!

Happy 5-year anniversary to us! Five years ago, we made our first door-to-door deliveries of plant-based, delicious food to Austin-area families. Five years later, we've scaled our operations thanks to hundreds of volunteers, deeper relationships with our farm partners, and more sophisticated preservation methods.

Looking forward to many more years of connecting Austin families with nutritious, whole-food options.

Last week, we broke out our dehydrator to make delicious, nutritious fruit and veggie leathers, preserving the goodness donated by our friends at Austin Fed. We're proud to be part of the system that connects surplus food with neighbors in need.

761 pounds of fresh produce were kept out of the landfill and put to better use in March to feed Austin families! 🥕🍎
