Let's do some mental housekeeping today and be real with ourselves about our lives. Are you TRULY happy with where you are in your life right now? Let's do a checklist:
-How is your health?
-Did you lose the weight that you wanted to lose?
-How is your job treating you? Is it paying you what you are truly worth?
-How are your children doing in school?
-How is your car running?
-Are you living in the home of your dreams?
-What is your status at the bank? (Some may have just gotten a tax refund....so, they have a little bit of a false security!)
-How is your relationship treating you?
-What was the last book you read?
And of course, the list goes on and on. I know when I look at this list and I truly think about my life goals and where I am right now....I have alot of work to do! There is no time to be lazy! There is no time to make excuses! There is no time to entertain foolishness. PERIOD. Wake up and win today!

Apple & Fennel Salad with Blue Cheese

Apples and blue cheese are a heavenly match in this fennel and apple salad recipe dressed with a tangy cider-vinegar dressing.

Makes 5 servings
Active Time: 15 minutes
Total Time: 15 minutes

Ingredients

1/4 cup of extra-virgin olive oil
2 tablespoons of cider vinegar
1/4 teaspoon of salt
1/4 teaspoon of freshly ground pepper
1 large crisp, sweet apple , such as Honeycrisp or Ambrosia, thinly sliced
1 medium fennel bulb , quartered and thinly sliced, fronds reserved
6 cups of torn butterhead lettuce
1/3 cup of crumbled blue cheese

Directions

Whisk oil, vinegar, salt and pepper in a large bowl. Add apple and fennel and toss to coat. Chop 1/4 cup of the fennel fronds and add to the bowl along with lettuce and blue cheese; gently toss.

Shopping Tip: Choose unbruised, firm apples with smooth skin. Store for up to 4 months in the refrigerator.

Put some pep in your step with these fluffy protein powder pancakes:

1 scoop vanilla protein powder
2 egg whites
1/4 cup unsweetened almond milk
3/4 t. baking powder
1/2 t. cinnamon
Agave nectar to taste
1/2 t. vanilla
***Optional***
Fruit
Directions:
mix all ingredients in a bowl. Stir just until they are mixed well. do not overstir.
Pour 1/3 of the batter into skillet. cook as you would with other pancakes.
I used melted natural brown sugar on mine. You could top with fruit, etc...
I'm thinking of making up quite a few to have ready in the mornings! They are that good!!!!
