β¨Pan-Seared Pesto Chickenβ¨

* 2 chicken breasts sliced in 1/2 lengthwise
* 3 tbsp olive oil
* 1 onion chunked
* 2 cups grape tomatoes
* 1/3 cup cream
* 1/3 cup basil pesto (homemade or store bought)
* classic sea salt blend
* Black pepper
* Garnish - fresh basil

1. Season chicken w/ sea salt & pepper
2. In a skillet w/ olive oil, sear each side of the chicken for 2-3 min or until fully cooked through and lightly browned. Then take out and set aside
3. In the same skillet cook the onions & tomatoes until lightly browned & blistered. Add more sea salt, pepper & olive oil as needed.
4. When done, put the chicken back in the skillet w/ the veggies.
5. Turn down heat to medium/ low and pour in the pesto & cream (keep in mind youβre just warming up the pesto & cream, not cooking it).
5. Garnish w/ fresh basil & serve.
