This flavorful throwback feature tells the story behind Carmen’s Green Sauce — the now-viral cilantro sauce created from a beloved family recipe that began in Venezuela in the 1980s and eventually became a local sensation across Georgia. ❤️

For years, Christian Corvos shared his mother Carmen’s homemade sauce with friends, teammates, classmates, and family members, and everyone became obsessed with it. From grilled meats and baked potatoes to eggs, tacos, burgers, seafood, and vegetables, people started putting the sauce on absolutely everything.

After Carmen passed away following her battle with cancer in 2022, the Corvos family decided to honor her legacy by bottling the recipe and sharing it with the community through farmers markets and local businesses. What started in mason jars at the Covington Farmers Market quickly exploded into a thriving family-run business with customers traveling all over Georgia for the famous “green sauce.” 🌿🔥

Now Carmen’s Green Sauce has become a Georgia Grown favorite, even earning recognition as a finalist in the 2025 Flavors of Georgia food product contest.
Summer is the perfect season for fresh flavors, grilling with friends, farmers markets, and discovering local stories that bring people together around food and family.
