“Our Poco Loco Beef Barbacoa is made with beef shoulder that is heavily seasoned in our house rub the day before cooking. After 24 hours we load the Big Green Egg up with lump charcoal and oak to give our shoulders a nice char and smoke bath. We then take the shoulder, marinate it in our barbacoa sauce, wrap it in banana leaves, and steam it for several hours until it falls apart. For National Cookout Day on May 9th you will be able to enjoy this Beef Barbacoa from the Big Green Egg as our weekly family meal or as a take away provision to enjoy in the comfort of your home!”
