This month we're pairing Pecorino Siciliano PDO with Nicosia LDM Etna Rosso from the volcanic slopes of Mount Etna in Sicily. Pecorino Siciliano is one of Europe's oldest cheeses, crafted in small batches from raw sheep's milk and aged to develop a firm texture with fruity, spicy character. Its savory depth finds a natural partner in the Etna Rosso's vibrant red fruit, floral aromatics, smokey minerality, and elegant structure.
Together, they create a pairing that feels distinctly Sicilian: rustic, expressive, and full of character.
