Everyone will agree that the undisputed king of barbecue is brisket. However, the recent price of brisket has shot up to the point that buying a quality packer is now easily $50, and starting to approach $70-$80. Even my small 4lb flats I get for an easy and quick family meal is now $10/lb.

My solution is the poor man's brisket, the Chuck arm roast. Find one with nice marbling and prep/smoke it the same you would as a brisket. It will taste very much the same. If you're lucky like me, you can find them in the discount bin at festival foods for $5 for a 2lb roast. Pics of done roast to come.

When it comes to pork, there is no doubt, using a mustard binder makes everything better. This 2lb loin came out so absolutely tender and delicious.

Tried something a little different today. This is a Horseshoe Sandwich, famous in Springfield, Illinois. I put my twist on it, by inserting some slow smoked brisket. Yum!
