My family goes crazy for this Creamy Cheesy Broccoli Pasta! 😍 It’s a hit every time and super easy to whip up on busy nights.

What you'll need: 👇
- 8 oz short pasta
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 medium shallot (finely diced)
- 2 large garlic cloves (finely chopped)
- 1/4 teaspoon red chili flakes
- 1 lb broccoli florets (chopped)
- 1 cup heavy cream
- 6 oz sharp cheddar (grated)
- Salt and freshly ground black pepper to taste
- Grated Parmesan (to serve, optional)

How to make it: ✨
1. Boil a big pot of salted water and cook the pasta till al dente (check the package). Reserve 1-2 cups of pasta water before draining.
2. While the pasta cooks, heat the olive oil in a large pan and melt in the butter.
3. Toss in the shallots and garlic, cooking for 1-2 minutes until they're translucent.
4. Add the red chili flakes and broccoli, and cook for about 5 minutes until the broccoli is bright green and tender.
5. Pour in the heavy cream and simmer for 1-2 minutes. Stir in the grated cheddar until smooth, adding a bit of reserved pasta water for that silky texture!
6. Mix in the cooked pasta and toss until it’s all coated. Add more pasta water if it looks dry.
7. Season with salt and pepper, and serve hot with grated Parmesan on top if you’d like!
