Save! I call this my shortcut chicken pho or Vietnamese chicken noodle soup recipe. I only make it for a quick dinner when I have rotisserie chicken leftover. I’ve shared the recipe before, but tonight I showing the girls how to make it. The ingredients are half a rotisserie chicken, 1 onion, 2oz’s of ginger, about 3 tbsp fish sauce, 1 oz of rock sugar if you have it or just 1 tbsp regular sugar and 1/2 tbsp salts. The spices are cinnamon stick, Star anise, cloves, coriander seeds and fennel seeds. Simmer for 45 minutes and taste to see if it needs more salt, fish sauce or sugar. Serve with pho rice noodles, cilantro, green onions, lime juice, sriracha and hoisin.
