Pickle-Brined Crispy Salmon Nuggets
Prep time: 15 minutes
Cooking time: 10 minutes
Total time: 25 minutes
Ingredients:
- 1 pound salmon fillet, skin removed and cut into bite-sized pieces
- 1 cup dill pickle juice
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- Vegetable oil for frying
Steps:
1. In a medium bowl, combine the salmon pieces and pickle juice. Cover and marinate in the refrigerator for at least 30 minutes.
2. In a shallow dish, mix together the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.
3. In another shallow dish, place the beaten eggs.
4. In a third shallow dish, add the panko breadcrumbs.
5. Remove the salmon from the pickle juice and allow any excess liquid to drip off.
6. Dredge each piece of salmon in the flour mixture, then dip into the beaten eggs, and finally coat with panko breadcrumbs.
7. In a large skillet, heat about 1/2 inch of vegetable oil over medium heat until hot.
8. Carefully add the salmon nuggets to the skillet in batches, being careful not to overcrowd. Fry for 3-4 minutes on each side or until golden brown and cooked through.
9. Remove the nuggets from the skillet and drain on paper towels.
10. Serve warm with your favorite dipping sauce.

Cajun Honey Garlic Butter Salmon
Prep Time: 10 minutes

Ingredients:
- 4 salmon fillets
- 2 tablespoons Cajun seasoning
- 2 tablespoons honey
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Steps:
1. Preheat the oven to 375°F (190°C).
2. Pat the salmon fillets dry with paper towels and season both sides with Cajun seasoning, salt, and pepper.
3. In a large oven-safe skillet, melt 2 tablespoons of butter over medium heat.
4. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
5. Stir in the honey and lemon juice, mixing well.
6. Place the seasoned salmon fillets in the skillet, skin side down. Cook for 3-4 minutes until the bottom is golden.
7. Carefully flip the salmon fillets and add the remaining 2 tablespoons of butter around them.
8. Transfer the skillet to the preheated oven and bake for 8-10 minutes or until the salmon is cooked through and flakes easily with a fork.
9. Remove from the oven and let rest for a couple of minutes.
10. Garnish with fresh parsley before serving.

Pickle De Gallo Shrimp Cups

Ingredients:
- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup diced pickles
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/4 cup chopped cilantro
- 1 lime, juiced
- Mini tortilla cups or tortilla chips for serving
Steps:
1. In a bowl, toss the shrimp with olive oil, garlic powder, chili powder, salt, and pepper.
2. Heat a skillet over medium heat and add the seasoned shrimp. Cook for 2-3 minutes on each side until pink and cooked through. Remove from heat and let cool slightly.
3. In a separate bowl, combine the diced pickles, tomatoes, red onion, cilantro, and lime juice. Mix well to create the pickle de gallo.
4. Take the mini tortilla cups or tortilla chips and fill each one with a spoonful of the pickle de gallo mixture.
5. Top each cup with a few pieces of the cooked shrimp.

- 1/4 cup brown sugar
- 2 tablespoons olive oil
- 2 cloves garlic, minced

- 1 tablespoon sesame oil
- 1/4 teaspoon black pepper
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Steps:
1. In a bowl, whisk together soy sauce, brown sugar, olive oil, garlic, ginger, sesame oil, and black pepper until the brown sugar is dissolved.
2. Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Let them marinate for at least 15 minutes.
3. Preheat the oven to 400°F (200°C).

- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Steps:
1. Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed. Remove from heat and let it sit for 5 minutes, then fluff with a fork.

- 2 ripe peaches, diced
- 1 jalapeño, seeded and finely chopped
- 1/4 cup honey
- 1/4 cup unsalted butter, melted
- 1 tablespoon olive oil
- Salt and pepper to taste
- Skewers (if using wooden skewers, soak in water for 30 minutes)
Steps:
1. In a large bowl, combine the diced peaches, jalapeño, honey, melted butter, olive oil, salt, and pepper. Mix well.

- 2 tablespoons honey
- 2 teaspoons Cajun seasoning
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 lemon, sliced
- Fresh parsley, chopped (for garnish)
- Aluminum foil
Steps:
1. Preheat the grill or oven to 375°F (190°C).
2. In a small bowl, mix the melted butter, honey, Cajun seasoning, garlic powder, salt, and pepper until well combined.
3. Cut four large pieces of aluminum foil and place a salmon fillet in the center of each piece.
4. Drizzle the Cajun honey butter mixture over each salmon fillet.
