IMHO cauliflower is underrated, although it is getting some recognition these days as cauli-rice.

Me? Gimme some whole roasted cauliflower instead. I love roasting it with Indian spices like cumin, coriander, cayenne, ginger, and garlic.

Tonight this cauliflower was roasted with just cumin, coriander, and s&p, and it is destined to top a biryani (rice pilaf) with golden raisins, saffron and toped with a herb-yogurt sauce. Yum!

While we often talk about the importance of different colors of fruits and veg, even though cauliflower is white, it is still packed full of nutrients. In particular, vitamins C and K, folate, and fiber. And as a cruciferous vegetable it is high in glucosinolates and isothiocyanates, which are known for being cancer protective. Cauliflower also contains carotenoids and flavonoids which may protect against other diseases like heart disease.

My first attempt at a Neopolitan-style Margherita pizza turned out pretty well.

The cornicione (wide edge of crust) didn't get quite puffy enough but practice makes perfect, right?
