We like to think of our restaurant as a theatre in which we are able to perform every day. The dishes, the wines, the setting, even the music we play, is maneuvered and organized to play and important role. The actors are the people who contribute to this production, and who have learned to love it as much as we do; the cooks, the sommeliers, the maîtres d’hôtel, the vegetable growers, and also the cleaners and the gardeners. Our wine cellar is certainly unique. We are able to offer 250 labels of the most representative wines, all of which are imported directly from Italy. Not only do we ensure on having an extensive collection of the highest qualities of wine, but we also acknowledge and act upon the fact that they need to be kept and housed at exact and constant temperatures. – All the wines are stored in specialized refrigerators, as we strongly believe that wines should not be exposed to heat of any kind. Upon opening our wine storages, one would find the ‘King’ Barolo, bubbles from Franciacorta and the rising stars of Southern Italy, the Tuscans.
