Appia is one of Bangkok’s first regional Italian restaurants – where chef/owner Paolo Vitaletti and his kitchen team focus on the food served in and around Rome. Created by Paolo Vitaletti and Jarrett Wrisley, Appia is both a tribute to the hearty, home-style food Vitaletti grew up eating at home and in his father’s butcher shops in Italy, and a forward-thinking restaurant serving local and imported artisan produce, organic Mediterranean wines, and cocktails.

Tucked into a narrow valley along the southern end of the Amalfi Coast, Cetara is a working fishing village more than a postcard. Anchovy boats still leave at night and return at first light. Above the harbor, lemon terraces hold to the hillsides. Life here moves at a slower, more practical pace, shaped by the sea and the seasons.
It’s a place that’s stayed largely unchanged, and one that’s left its mark on us. You’ll find it woven through our cooking and throughout our book, The Roads to Rome.
