GNOCHETTI â Winter Edition
Our Koji-fermented gnocchetti are crafted without potato, made instead from a fermentation of koji, ricotta water and flour, creating a delicate yet deeply savoury texture.
They are paired with a green pesto of three Thai vegetables, whose combined character evokes the bittersweet soul of cime di rapa.
Finished with a Parmesan reduction and different textures of nori seaweed, bringing umami, salinity and contrast to the dish.
