Gluten is only a problem for people who are sensitive to gluten. Not everyone is sensitive to gluten.

However, gluten can trigger brain autoimmunity in gluten-sensitive people.

One of the most common mechanisms for people who are gluten sensitive is they have a zonulin release that opens up their tight junctions of their gut, causing leaky gut.

But zonulin also opens up the tight junctions of the brain.

This allows antibodies produced against gluten into the brain where they can bind to brain tissue due to a mechanism called cross-reactivity.

Each protein has an amino acid sequence, including proteins in foods and in your body. Amino acid sequences in foods such as gluten can be found in our body and brain, particularly the cerebellum.

As a result, gluten antibodies bind to the cerebellum as if it was gluten.

Then immune T-cells go in there and destroy whatever the antibody is attached to.
