Yes we have many traditional regional recipes and it’s not the usual dishes that you see around!!
In Sardinia, the Lorigghitas with chicken sauce and tomato sauce, in Emilia Romagna it’s tradition to cook pasta with white ragù from farmyard animals, such as chicken and rooster, in Veneto it’s cooked with marinated rooster ecc... and we have always cooked the pasta in chicken broth.

So don’t confuse the Italian authentic method with the fake one from other countries that attribute it to us when it isn’t😁
