Chef Ricardo’s culinary career began at the Pestana Group and grew to a point where he led several units within Pestana Hotels and Pestana Pousadas in the Algarve and Lisbon. It was the age of just 19 that his career was fast-forwarded and he faced his first encounters as a qualified chef. His professional roles have taken him to Paris where he lived for six years and to Aveiro City, where his strong connections to the sea enhanced his tenure with Group Olivier, where he led his brigade at the well-known Olivier Avenida. And now a new chapter commences for Chef Ricardo as he takes the role of Executive Chef at historic Farol Hotel on the waterfront of Cascais. Guest will delight to his preparation of seafood dishes such as lemon snapper accompanied with a spicy bean stew, sea bass with Foie Gras and pea puree, grilled octopus on a bed of spinach or a lobster risotto with ginger infusion is unequalled.
