Chez Daniel at the Club

he opened his eponymous Chez Daniel in Palmas del Mar, regarded as one of Puerto Rico’s best French restaurants and a recipient of several Silver Fork recognitions. Vasse followed this success with Tapas Bar de Chez Daniel in 2004 and BistroRico in 2007, both in Palmas del Mar, and Bistro Tartine in Caguas, which debuted in 2008 and adds a modern twist to a traditional French bistro. Vasse, who in 2009 received Tables’ Hallf of Fame award, is also a member of the l’Ordre Mondial du Vin and the president of Friends of the Comunity of Humacao, a not-for-profit association that created and organizes the Festival de la Buena Vida in Palmas del Mar. Vasse participated in the creation of the book La Buena Vida, with proceeds going toward the construction of Palmas Academy, and in the book La Gran Cocina del Caribe.
